I ran into exactly the same problem recently using Finale 2007 with the NI-powered (Kompakt) East West Symphonic Orchestra Gold Edition, same combination, on Vista 64-bit, quad-core Intel i7-920, 6GB RAM etc., almost all the same specs.
The problem is that although you're running a 64-bit OS, Finale is a 32-bit program. This means that by default, Finale can only access a maximum of 2GB of RAM. That 2GB limit includes all the RAM being used by those multiple instances of Kompakt player, because Kompakt is being hosted by Finale.
On my system, when I checked Finale's RAM usage under Windows Task Manager, Finale would crash if I exceeded roughly 1.7GB RAM usage. At that point I was at only about 50% system RAM usage, but as I've already noted, the amount of system RAM being used isn't the issue - the issue is that 32-bit Finale + lots of hosted Kompakt instances puts you over the default 32-bit application memory limit of 2GB.
I found a solution, however, after a bunch of googling and experimenting. There is a utility called LaaTiDo available at http://www.musikbanken.se/TechLaaTiDo.aspx (the actual download link is http://www.musikbanken.se/laatidosetup.exe) that allows you to essentially 'hack' Finale's executable (finale.exe) to turn it into a Large Address Aware application that can access up to 4GB of RAM when running in a 64-bit OS.
I'm not sure, but depending on what version you're running, Sonar may be a 64-bit program (so essentially no RAM limit), or at least a 32-bit program that is already Large Address Aware, so that's probably why it loads the same instruments as Finale with no problem.

I haven't had to push Finale 2007 to the point where I'm asking it to safely use all 4GB, but I certainly have no problems any more when using Finale in the 2-3GB RAM usage range (remember, that's the application's memory usage, not the memory usage of my system as a whole).
The LaaTiDo application is very easy to use once you've read the author's page above, have downloaded the program and gotten it going. You tell LaTiDo where your finale.exe file is (usually under Program Files (x86) >> Finale or something like that) and it then alters the executable. You can also backup the original executable in case changing the file makes it unusable on your system.
